I’m going to be honest, I’m equal parts excited about this slow cooker thai peanut beef and the cuuuute little Le Creuset casserole dish it’s served in. That’s right kids, I love kitchenware almost as much as I love food! Approximately 3 minutes after unwrapping it I took to instagram and twitter to share my joy, because what’s the point in pretty things if you can’t show them off!? I jest…

Anyway, back to the food! I love peanut butter because it’s so versatile (how many ingredients work equally well in chocolate cake and a thai beef dish!?). It’s a key ingredient in my slow cooker thai peanut beef and lends a nutty flavour to the salty, sweet sauce. Umm, hello all of my favourite things.

I’m trying to get more slow cooker recipes together because sometimes I get home from work and just want to spend my evening enjoying food rather than making it. Ya know? This is perfect on that front – once it’s in the slow cooker there’s zero effort required. Just serve, and enjoy!

Slow Cooker Peanut Beef Satay

Yield: 6 servings

Slow Cooker Peanut Beef Satay

Ingredients

  • 1 tbsp sesame oil
  • 800g beef, diced (braising or casserole steak works best)
  • 250ml beef stock
  • 125g peanut butter
  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 tbsp rice mirin
  • tabasco sauce, to taste

Instructions

  1. Heat the sesame oil in a large frying pan over a medium heat. Add the beef and stir until the meat is sealed.
  2. Add the seared beef and all other ingredients to your slow cooker. Cook on low for 8-10 hours.

    Looks delicious Slow cookers are awesome so useful. I’m yet to try a pressure cooker you ever used one?

      Nope never used a pressure cooker but my mum just got one and has been raving about it! I don’t know that my tiny little kitchen can handle any more gadgets though!!

    First time I made this, it turned to a black mess! Took me 2 hours to clean the slow cooker, as it was one big black crust of burned food! I’m sure there is a mistake in the recipe/ ingredients. I will try this recipe one more time, but this time with at least 2 liters of extra fluids (e.a. Water or beef stock). Cooking with peanut butter is always tricky, as it tends to stick to the bottom and sides if not stirred regularly, which will ultimately burn.

      Hi Padme, sorry to hear this recipe didn’t turn out well for you – I’ve never had any problems with it in the past. I sometimes cook it for less time (5-7 hours) on medium – maybe try a shorter cooking time? I know slow cookers can vary a bit in terms of how hot they actually are. Hope your second try is more successful.

        Hi Kirsty, thanks for your comment. I’m definitely not turned off by one mistake. Cooking with a slow cooker from recipes is always by trial and error, as all slow cookers vary, and so do the ingredients in a different country. I’m a peanut butter junkie, so I will definitely give this another go and let you know how it turns out! Greetings from the beautiful island of Mallorca, Spain!
