Guys, I’m about to ramble right at ya. About exam stress, technology meltdowns and also the beauty that is cherry bakewell overnight oats. You’ve been warned!

Oh man, what a crazy few days it’s been! I’ve been buried deep in notes and calculations for the last couple of weeks so this little space hasn’t had much of a look in. Aaand then the night before my first exam the site went down. Because of course. I’d like to say I handled it with grace and calmly put it to the back of my mind whilst I focused on studying but there may have been signs of a meltdown…

Mini freak-outs aside, I’ve been keeping things pretty simple on the food front lately. When life gets busy I’m all about quick, easy, satisfying meals. A breakfast that’s healthy and literally takes zero prep in the morning is basically the dream during exam time. It lets me chuck a few ingredients together in the evening when I’m too tired to study and then in the morning there’s one less thing to stress me out. Because, yes, breakfast decisions are totally stressful 😉

p.s. I have a new found respect for all you graphic designers out there. Who knew the seemingly simple act of choosing fonts could be so freakin’ hard!? And that was with the help of Ricky and his comprehensive background in this stuff (err, high school graph comm is comprehensive, right?)

p.p.s don’t even think about dismissing this as ‘cold porridge’ and therefore horrible because I promise you it is GOOD. And if you want to be all hipster and pinterest-y you can even shove it in a jar and take it to work. Life hack, right there.

Cherry Bakewell Overnight Oats

Yield: 1 serving

Cherry Bakewell Overnight Oats

Ingredients

  • 40g oats
  • 20g ground almonds
  • 100g cherry yoghurt
  • 75ml almond milk
  • To top
  • handful flaked almonds
  • handful cherries

Instructions

  1. Mix the oats, ground almonds, cherry yoghurt and almond milk together. Top with flaked almonds and cherries.
  2. Cover and refrigerate overnight. By morning the oats will have softened and you can eat it straight out the fridge.

    This sounds amazing! Almond and cherry together are such a dream. I’d never really thought to have cold porridge but I’d definitely give this a go. Choosing fonts is my nemesis, I’ve spent whole days at work just looking at fonts and its the one sticking point on the redesign of my blog at the moment 🙁

    I’ve been wanting to try overnight oats for a while but I was never convinced I’d like them until you throw cherry bakewell into the mix. I’m sold! Can’t wait to try these out.
