Happy World Gin Day! For once I’ve actually been organised enough to get a relevant post together for it. Although, admittedly, I did spend most of the car journey to Skye yesterday editing photos so perhaps not all that prepared! On that note, as this post goes live I’ll be preparing to run the Skye Half Marathon so there’ll be a fairly large gin on the cards for me this evening!
This rhubarb elderflower gin cocktail recipe was a bit of an experiment but – luckily for you – a triumphant one! Rhubarb and gin form the base of this lovely spring cocktail. A hint of floral sweetness from elderflower cordial mellows out the tart flavours to create a well-rounded, refreshing drink!
To make this, we start with a rhubarb syrup infused with rosemary. If you’re currently screwing up your face at the thought of rosemary in a cocktail then please, give it a try! There’s just enough to give an extra dimension of flavour without overpowering the other ingredients.
To that, we’ll add a little elderflower cordial (I love Bottle Green but use whatever you can get your hands on), some gin and plenty of ice. Garnish with a sprig of rosemary and enjoy!

P.P.S The rhubarb syrup recipe makes enough for way more than one cocktail but I trust that you’ll make use of some extra 😉
Ingredients
- 500g rhubarb, chopped
- 250g sugar
- 1 sprig rosemary
- Red food colouring (optional)
- 60ml rhubarb syrup
- 20ml elderflower cordial
- 60ml water
- 40ml gin
Instructions
- To make the syrup, add the chopped rhubarb to a pot and just cover with water. Bring to a boil then reduce heat and simmer for an hour.
- Remove from heat and strain the liquid through a sieve into a large bowl. Add 500ml of the liquid and the sugar to a pot or large frying pan. Simmer for 5-10 minutes until the mixture has thickened to a thin syrup. Remove and allow to cool. If your syrup isn’t as red as you’d like, add a couple of drops of food colouring and stir in.
- Fill a short glass with ice and pour in rhubarb syrup.
- In a separate glass, mix elderflower cordial, water and gin. To get an ombre effect, hold a teaspoon facing downwards in the cocktail glass and pour the gin/cordial mix over the back of the spoon, gently.
- Garnish with rosemary and serve.
