Hello! Today I’m sharing a recipe from slightly further afield as part of the Jet2 Holidays Country Cuisine Challenge. The aim is to get creative with a recipe inspired by a popular holiday destination.
I’m always looking to mix things up a bit in the kitchen so this presented the perfect opportunity to try my hand at a new cuisine! For my destination I chose Kefalonia, one of the Ionian Islands in Greece. There’s so much wonderful food originating in Greece (I’m lookin at you, tzatziki and spanakopita!) but I’ve opted for something entirely new to me.
Tirokafteri is a spicy dip made from feta cheese, chillies and olive oil. It’s similar to hummus in consistency with a great depth of flavour. My recipe has the unconventional addition of ricotta, which I love for the extra creaminess it brings to the table.
You’ll notice that this is a very short recipe. It really is just chucking salty feta, chillies, ricotta, olive oil and some vinegar together and mixing. I made it with a processor but you could just as easily mix by hand for a slightly more rustic dip.
Serve your tirokafteri with some freshly made, warm pita bread (recipe coming soon!) for an easy appetizer or delicious snack!

Ingredients
- 5 - 10 chillies (to taste)
- 200g feta
- 150g ricotta
- 2 tsp red wine vinegar
- 100ml extra virgin olive oil
Instructions
- Roughly chop the chillies. Add all ingredients to a food processor and process until smooth.
- Chill before serving.
