I promised you this raspberry mojito recipe over 2 weeks ago now and I’m finally delivering. Rejoice!
It’s actually a little late since we’re right at the end of raspberry season in the UK but hey, I’d be up for drinking these all year round.
A few weeks ago we discovered that there’s mint growing right outside our flat, and ever since then I’ve had raspberry mojito cocktails on the brain.
I think I managed to hold out til the Friday evening to grab some ingredients and test these out! Obviously, several drinks were required to ensure the recipe was juuust right 😉
This is one of my favourite ways to liven up a regular mojito. Don’t get me wrong, a classic mojito is a beautiful thing. But, the extra sharpness of fresh raspberries makes this cocktail just that little bit more refreshing and exciting.
Also, it’s super easy to make. Real talk: I do not have the patience to whip up fancy pants cocktails at home.
Like sure, if I’m in a cocktail bar and someone who knows what they’re doing can make me a 10 ingredient drink that requires a full blown arm workout then I’m aaall for ordering that.
But at home? Give me something that takes minimal effort and no more than a couple of minutes and I’m happy.
If you want to keep things super simple you can skip the crushed ice and go for good ol’ cubes instead.
I actually got waaay too excited to discover that my processor is strong enough to crush ice. It also brought back some excellent memories of the Mr Frosty machine that I absolutely loved as a kid!
Anyone remember those?? Apparently my obsession with kitchen gadgets started longer ago than I thought!
Ingredients
- 50g raspberries
- 12 mint leaves
- 1 tbsp sugar
- 1 lime, cut into wedges
- crushed ice
- 50ml white rum
- 50-100ml soda water
- Sprig of mint
- Raspberries
Instructions
- Add the raspberries, mint leaves and sugar to a glass and gently muddle using a bar spoon or end of a rolling pin. Add the lime wedges, squeezing the juice into the glass first.
- Fill the glass with crushed ice then pour over the rum and soda water. Garnish with a sprig of mint and a couple of raspberries and serve.
