Cocoa Peanut Butter Energy Bites

Peanut butter energy bites recipePeanut butter energy bitesToday I’m sharing a bit of a healthier snack for you. These little energy bites are packed full of good stuff and are great for satisfying a sweet tooth without putting you into a sugar coma (something that’s becoming a little too regular an occurence lately!).

The dates make these beautifully fudgy and sweet, exactly how I like my healthy snacks 😉 I’ve kept it quite light on the cocoa to let the other flavours come through but an extra 2 tablespoons of cocoa powder will make them super chocolatey and truffle-like.

Cocoa Peanut Butter Energy Bites

Yield: 20 bites

Cocoa Peanut Butter Energy Bites

Ingredients

  • 300g pitted dates
  • 50g peanut butter
  • 2 tbsp cocoa powder
  • 1 tbsp honey
  • 15g desiccated coconut

Instructions

  1. Add all ingredients except the desiccated coconut in a food processor and process until the mixture forms a ball. Divide into 20 equally sized pieces and roll into balls. Roll in the desiccated coconut to coat each energy bite.

Notes

Store in an airtight container for up to 5 days.

    These look amazing, I’m going to make some tonight! Just waiting on Les returning with desiccated coconut, the stuff she had in her cupboard went out of date in 2k9. Me and Kate have lists of stuff to make from here!!xx

    I just made these and they are very tasty. I used hot chocolate powder. They are very sweet I love them, yum yum, thanks for the recipe.
