Chorizo Scrambled Eggs

Let’s talk about eggs. Eggs are one of my favourite foods – they’re versatile, tasty and packed full of healthy stuff. And these chorizo scrambled eggs tossed with crispy, crushed tortilla chips are my current favourite incarnation.

You might have guessed by now that I’m aaall about breakfast foods. Gimme pancakes for breakfast, eggs for lunch and waffles for dinner. Breakfast food is best eaten any damn time of the day you want.

I’ve actually never eaten these chorizo scrambled eggs for breakfast. They were thrown together on one of those ‘there’s no food in the fridge’ evenings and the addition of tortilla chips was an entirely random happy accident. Little crunchy, salty nuggets amongst velvety soft eggs and rich chorizo, ohh yeah. Pile them high on heavily buttered toast and feel like you’ve won the easy-tasty-food-lottery.

What are your favourite ways to eat eggs? Once I come down from my chorizo egg high (I don’t even know, OK?) I want some new recipes to test out. Be thankful I didn’t go down the ‘eggsperiment’ pun route there…

Chorizo Scrambled Eggs

Yield: 2 servings

Chorizo Scrambled Eggs

Ingredients

  • 20g butter
  • 50g chorizo, diced
  • 5 medium eggs
  • splash of milk
  • 20g tortilla chips, crushed
  • To serve
  • Toasted bread

Instructions

  1. Heat the butter in a frying pan and add the chopped chorizo. Cook over a medium heat until the chorizo starts to release its oil.
  2. Beat the eggs and milk together and add to the pan. Stir continuously until almost cooked. Add the crushed tortilla chips and stir in. Remove and serve on toasted bread.

    I LOVE this! I think I’d maybe add a layer of smashed avocado underneath the eggs as well. Just to make it fancier haha 😀 xx

    Oh yes, these are something I need in my life. I’m with you on the breakfast foods all day long, and these look great. Scrambled eggs are so amazingly versatile, I’m a big fan of paprika in them just now.
