I mentioned how excited I am about asparagus season a couple of posts ago whilst raving about this chopped chicken bacon salad. Well, asparagus season’s still here and I’m still excited! Mainly because I feel like I’ve discovered a food combination that was just meant to be in this prosciutto wrapped asparagus.

FYI, food is about the only thing I’ll ever talk about being meant to be. Seriously, perfect food combinations is the stuff I get spiritual about. Anyway, with that odd admission out of the way, let’s talk about the ingredients that make this food heaven:

:: grilled asparagus
:: savoury, meaty prosciutto ham
:: salty parmesan
:: oozy poached egg

That’s it! Four ingredients and no faffing about. The result is a dish that makes an elegant starter, a sneaky evening snack or a light breakfast. Serve with a thick slab of toast and you’ve got yourself a hearty brunch and even managed to sneak one of your 5 a day in!

Prosciutto Wrapped Asparagus + Poached Egg

Yield: 2 servings

Prosciutto Wrapped Asparagus + Poached Egg

Ingredients

  • 125g asparagus
  • 4 slices prosciutto ham
  • handful grated parmesan
  • 2 eggs

Instructions

  1. Cut or tear the ham into thin strips and wrap around each stalk of asparagus. Grill under a medium-high heat for about 5 minutes.
  2. Meanwhile, add about 2-3cm of water to a deep frying pan and bring to a very gentle simmer. Crack the eggs into the pan and use a spoon to gently ladle water over the top of the eggs. Cook for about 3-4 minutes until whites are cooked but yolk is still runny. Drain with a slotted spoon.
  3. Remove the asparagus from the grill and sprinkle with grated parmesan. Top with the poached egg.

    This is my dream lunch. I love eggs, in any form, but the golden, silky, yolk of a poached egg is pretty hard to beat. Thank you for posting a gorgeous recipe. Sammie x http://www.feastingisfun.com
